Easy Everyday Recipe: How to make Vodka Pasta - Pasta alla Vodka

Combining rich vodka-infused sauce with al dente penne or rigatoni, this classic pasta alla vodka recipe is ready to eat in just twenty-five minutes. Add a pinch of chilli flakes for a spicy vodka pasta dish that is sure to impress.


  • 2 tbsp olive oil
  • 1 onion
  • 3 garlic cloves
  • 1/4 tsp chili flakes
  • 100g tomato paste
  • 5 tbsp vodka
  • 150ml whipped cream (38%)
  • 200g penne or rigatoni pasta
  • 100g grated parmesan, plus extra to serve
  • Handful of fresh basil


Time: 25 minutes

  1. Heat olive oil in a deep pan or pot. Dice the onions and sauté on low heat with a pinch of salt until soft and translucent. Add the pressed garlic and chili flakes, stir in the tomato paste, and cook for 2 minutes. Add the vodka and simmer for 3 minutes. Mix in the cream and remove the pan from the heat.

  2. While the sauce is simmering, cook the pasta in salted water according to the instructions on the packet. Drain the pasta and reserve 150ml of the cooking water. Mix about 50ml of the saved cooking water into the sauce, adding more cooking water as needed to reach your preferred consistency.

  3. Mix the pasta and grated Parmesan into the sauce. Stir on a low heat until the pasta is fully coated in the sauce. Season to taste with salt and pepper, serve with extra parmesan and fresh basil on top.
