Easy Everyday Recipe: Healthy Breakfast Bowl

This delicious breakfast bowl recipe is packed with nutritious ingredients, including roasted vegetables, kidney beans, eggs, and avocado. Follow these simple steps to create a satisfying breakfast that will keep you energized throughout the morning!

Ingredients

  • 1 avocado
  • 1 courgette
  • 5 tomatoes
  • Salad leaves
  • 1 tray of mushrooms
  • 1 tin of kidney beans
  • 2 eggs
  • 1/2 pot of Creme Fraiche 18%
  • Ketchup
  • 2 tbsp BBQ seasoning
  • 2 tbsp paprika
  • Chili flakes
  • Fresh parsley, coarsely chopped
  • Salt and pepper
  • 1 lemon

Preparation

Time: 25 minutes

  1. Begin by dicing the courgette and mushrooms into bite-sized pieces. In a pan with a touch of oil, gently sauté the vegetables over low heat. Season with BBQ spice, paprika, chili, salt, and pepper. Allow the vegetables to cook for 8-10 minutes until tender. Once cooked through, transfer the vegetables to a bowl.

  2. Prepare the salad base by cutting tomatoes into small pieces, thinly slicing the avocado, and draining the kidney beans. To make the dressing, combine the sour cream with ketchup, lemon juice, salt and pepper.

  3. Fry two eggs to your desired level of doneness. Arrange the salad leaves, kidney beans, roasted vegetables, avocado and fried eggs on a plate. Drizzle on the dressing, garnish with coarsely chopped parsley, and enjoy!
